Pineapple Ice Cream (without Ice Cream Machine)

Another variation of my mango sorbet recipe. This time I made pineapple ice cream.

Here are the ingredients:

200 g pineapple (cubed, frozen)
20 g sour cream 
20 g caster sugar
1/2 tsp lemon juice 
1 tsp honey 


Equipment & utensils:

Food processor, spoon, ice cream scoop.


Method:

1. In a food processor, add pineapple, sour cream, caster sugar, lemon juice and honey. Start processing, stop and scrap and process until it is smooth.
2. Transfer to a container lined with cling wrap.
3. Freeze overnight. Freeze the equipment and utensils too.
4. When you're ready to eat the ice cream, take the frozen ice cream, roughly chop it and blitz one more time in food processor until almost smooth.
5. Quickly scoop into the serving glasses.

Make: 3-4 servings
