Here is my fail-proof potato rosti recipe. Cook some sunny side up eggs, bacon, ham, sausage and throw in some salad, you have a good breakfast to start your day!
Ingredients for potato rosti:
2 large potatoes
1 tsp butter
1 tbsp olive oil
salt & pepper to taste
Method:
1. Clean the potatoes but no need to peel off the skin. Put them in a saucepan and fill in water 2-3 cm above the potatoes.
2. Boil for 20-25 minutes until the potato is soft but not too soft as we need to grate it.
3. Peel off the skin then grate the potato (this step can be done 1 night in advance)
4. On a medium skillet, heat up butter with olive oil. Add in all grated potatoes and sautee it for 1-2 minutes. Season with salt and pepper.
5. Press down all the potatoes until it forms a nice thin round shape.
6. Cook for 3-4 minutes until it forms like a crust below. It should be golden brown colour.
7. Brush the top with some more butter and olive oil. Flip and cook the other side for another 3 minutes until it forms a crust, and it’s ready!
