Yellow Curry

I just made this yellow curry and post in my IG, and one of my friends asked for the recipe, so I thought why not I share it here too. So here it goes.

Ingredients:


Part A:

1 lemongrass 
few curry leaves
1 cinnamon stick 
2 star anise 
2-3 cloves 
1 tsp cumin powder 
1 tsp tumeric powder

Part B

550ml water
400ml coconut milk 
2 tsp salt 
1 1/2 tsp sugar
oil

Paste:

5 garlics
4 shallots
2 red chilli
4 bird eye chilli
1 tsp coriander powder


Method:

1. Blend the paste or pound it better.
2. In a pot, heat up the oil, cook the paste until fragrant then add  Part A ingredients. Stir for a while and add Part B ingredients. Cook in medium heat until boiling then simmer for 10-15 mins, strain.
3. You can add vermicelli or yellow noodle, some potato, chicken and fishcakes. I added stuffed tofu dumpling that I made myself. I will write the recipe in my next post.

Yield: 2 portion
