Roti Paratha (Indian Flatbread)

A quick recipe for a basic roti paratha. From this recipe, you can make a lot of roti variations, e.g. you can add compound butter, onion, cheese, egg, banana, whatever you desire.

Ingredients:


1 cup flour (more flour for dusting)
1/2 tsp salt
1/3 - 1/2 cup water
1-2 tbsp olive oil (for brushing)
vegetable oil for pan-fry


Method:


1. In a mixing bowl, mix flour, salt and water together. Add some more flour if it sticks to your hand. Keep a small bowl of flour so it's easy to work.
2. Transfer to the worktop dusted with flour and knead until it forms a nice dough.
3. At this stage, you can either continue cooking or keep it in a fridge until you need to cook it.
4. Cut the dough into 4 parts. Take 1 part and pinch with your finger to form a flat round shape, dip it into a bowl of flour and start to roll with a rolling pin till flat. Then brush some olive oil on the surface, fold it and roll it again with the rolling pin, as thin as you can handle.
5. In a skillet, heat up some oil. Then fry the roti for 2-3 minutes on each side until the colour turns golden brown.

Make: 4 roti (2 servings)
