Vue de Monde is one of the top ten restaurants in Australia, featuring a modern Australian cuisine. The Head Chef, Shannen Bennett's vision is to make Vue de Monde a sustainable restaurant by utilising the most cutting edge technology in his kitchen to preserve the energy, also uses recycled products, homegrown and small-farm organic produce wherever possible.
The restaurant is located at Level 55, Melbourne's iconic Rialto Building, with 365 degree views over the city. The atmosphere of this restaurant was cozy and sophisticated. We went there for lunch. The food was fabulous with an absolutely stunning presentation.
Our first amuse-bouche are carrot sticks, jelly raviolis, salmon with caviar, beef tartar and chips.
Next, we had our entree, Prawn Russian Salad and Ox Tongue Salad. Both were great, the salads had beautiful colour and flavour.

While waiting for the main course, we had the refreshing Cucumber Sorbet & Crushable Herbs. The edible flowers and herbs were first served, then the waiter poured liquid nitrogen into it, crushed it, before quenelling the cucumber sorbet on top of it. The crushed frozen herbs added a crunchy texture to the sorbet.
Then, came our main course, Flathead with Tarragon & Swede and Wagyu Beef with Dried Apricot, Jerusalem Artichoke & Smoked Bone Marrow. I remembered the flathead was perfect, crispy skin outside, moist and soft inside. The wagyu beef was absolutely divine and everything else in the dish tasted as good as they should be.
