Stuffed Tofu Dumpling

This is the stuffed tofu dumplings that I put in my previous post (yellow curry), with chicken, potato and rice vermicelli.

Ingredients:


Stuffing:
100 g chicken
50 g prawn
4 garlic
1 shallot
1 egg
3 tbsp flour
salt & pepper
2 stalks spring onion, chopped

8 tofu puff, cut halves

Batter:
1/2 cup flour
1/4 cup potato flour
1/3 - 3/4 cup water
1/4 tsp salt
1/4 tsp baking powder

Oil for deep frying

Method:

1. In a food processor, mince chicken, prawn, garlic and shallot. Then transfer to a bowl, mix in the egg, flour, salt & pepper and the chopped spring onion. 
2. Stuff the filling into the all the tofu.
3. Mix all all the ingredients to make the batter.
4. Heat up the oil in a cooking pot. When the oil is hot enough, dip the stuffed tofu in the batter and put to fry. Fry all sides until golden brown colour then it's done!
