Ingredients:
2 large potatoes
For Saute:
1 coursely chopped garlic
3 coursely chopped shallot
4-5 coarsely chopped bird eye chilli
1 sprig curry leaves
4-5 cardamon pods
1/2 tsp cumin powder
1/2 tsp coriander powder
1/2 tsp tumeric powder
1/2 tsp garam masala
salt & black pepper to taste
vegetable oil for sauté
2-3 cloves
2 star anise
1/2 tsp sugar
Method:
1. First, boil the whole potatoes for 20-25 minutes. Peel off the skin then cut into small cubes.2. In a medium saucepan, heat up the oil, and sauté those ingredients above, put in one by one. Add little oil if it's too dry.
3. Add 1/3 cup water. Throw in the cloves, star anise, sugar and let it boil. Turn down to simmer and cook until the potato become mushy. Add water if needed to adjust the consistency.
