Tau Suan (Split Mung Bean Soup) - Chinese Dessert

This is a famous Chinese dessert, especially in Singapore. You can find it in almost every dessert stall in Singapore.

Ingredients:

150 g soaked split mung beans
1 tbsp caster sugar
800 ml boiling water
2 knots panda leaves
80 g rock sugar
20 g potato flour (diluted in 100 ml water)
1 you tiao for garnish

Method:

1. Boil water and the panda leaves in a pot.
2. Meanwhile, sauté the split mung beans with the caster sugar until the colour turns a little brown.
3. Transfer the split mung beans into the boiling water.
4. Add rock sugar. Cook for 20 minutes.
5. Add the potato flour slurry.
6. Cook for few more minutes.
7. The tau suan is done. Serve in a bowl topped with some you tiao.
