This is a crispy pancake. The scallion (spring onion) and sesame oil makes it so fragrant and delicious.
Part 1: The pancake
Ingredients:
225 g all purpose flour
125 g water
2 tsp salt
1 tsp sesame oil
2-3 stalks spring onion, chopped
oil for brushing and pan-fry
Method:
1. First combine the flour, salt, sesame oil and water and knead until it forms a smooth dough.
2. Roll the dough into big square as thin as you can.
3. Brush the dough with some oil, then sprinkle the chopped spring onions.
4. Roll the dough like rolling a cinnamon roll. Then cut it into 8 pieces of small rolls. Pinch the edge into the bottom and roll it flat.
5. When all the pancakes are done, pan-fry until both sides are crispy and golden brown. It should take about 3-4 minutes per side.
Part 2: The dipping sauce
Ingredients:
2 tbsp light soy sauce
2 tbsp vinegar
1 tsp sugar
2 grated garlic
2 chopped bird eye chillies
