Layer Cake (Spekoek)

I'm making the Indonesian version of 'Baumkuchen' (layer cake) and the locals call it 'Spekoek'.

Ingredients:

4 whole eggs
60 g milk
1 tbsp vanilla essence
2 tbsp dark rum
1 tsp cinnamon powder
1/2 tsp mixed spice powder
175 g caster sugar
175 g brown butter
80 g all purpose flour
10 g raisin, flattened

Method:

1. First, prepare the brown butter by cooking the butter in a saucepan until it turns brown. Watch it as not to burn the butter. Swirl it once in a while. Set aside when it's done.
2. Meanwhile, pre-heat the oven at 190C and line a 3x6 inch loaf pan with a parchment paper.
3. In a large mixing bowl, whisk the eggs until it's pale, bring it to a double boiler (bain marie). Add the caster sugar, mixed spice and cinnamon powder, and continue to whisk the eggs. Pour in the milk, vanilla essence and dark rum. Whisk until it's light and fluffy.
4. Slowly pour in the brown butter and continue whisking.
5. Sift in the flour and whisk to combine.
6. Now ladle the batter into the loaf pan. 1 ladle is enough for a thin layer.
7. Bake in the oven for 4-5 minutes until the batter is cooked.
8. Ladle another layer of batter and cook for another 4-5 minutes.
9. Repeat this process until the batter is finished.
10. On the last layer, place some raisins on top as a decoration.
11. Bake the last layer for about 5 minutes until the top is brown.
12. Cool it on a cooling rack for 15 minutes and it's ready to be sliced and served.
