Ginger Cookies

I got this Worldfoods' ginger paste. So I decided to make ginger cookies. It is a good company for the earl grey tea.




The ingredients are very simple:

150 g pancake mix (or 150 cup flour + 1 tsp baking powder)
pinch of salt to the flour
50 g caster sugar 
+ 55 g brown sugar
125 g butter (slightly cold)
1 egg
1/2 tsp mix spice
1 tsp cinnamon powder
1 tsp Worldfoods' ginger paste

Sesame seeds / chia seeds (for garnish)

Method:

1. Whisk the butter with the sugar.
2. Then add the egg, sift half of the flour and whisk.
3. Then sift the remaining of the flour and fold in with spatula.
4. Add the mix spice and Worldfood's ginger paste.
5. Mix well until all are combined.
6. With 2 teaspoons, shape the cookie dough into a ball, place it on the baking tray. Make space between each other, the dough will expand as it bakes.
7. After all are done, wet your finger and flatten down the cookie dough a little. Then garnish with sesame seeds or chia seeds.
8. Bake at 175 C for 15 minutes or until golden brown.
9. Let it cool down in a cooling rack. Once it's cooled, store those cookies in a jar and keep in the fridge so they stay fresh and crispy.

Yield: 20 cookies
